I love meals that are made mostly in one pot. I’m not a fan of making a main dish and side dishes. Less dishes, less thinking. Here are some of my favorite, mostly one pot meals.
Super easy and can also be served over rice. This chicken turns out super tender every time I make it. Our family loves this one!
Another crowd pleaser and so easy to make! We love to use Near East brand couscous in the Mediterranean flavor. You’ll have to cook the couscous in a separate pot, but it only takes 5 minutes to make. So yummy!
This is pure comfort food! I could eat risotto for days and this recipe is a go to when I get a hankerin’ for creamy, savory, pasta-like meals.
Quick, flavorful, and healthy! The recipe is a cold dish but I make it into a hot dish and it’s very satisfying.
Not quite one pot because you have to boil your pasta separately, but still super easy and quick! So much savory goodness in this meal!
Roasted vegetables are my jam so the sauce for this speaks to me. You can add vegan sausage, regular italian sausage, or chicken to this as well.
I’ve had friends try this who were VERY skeptical because it’s vegan. They were believers after one bite!
Healthy, flavorful, comfort food. This soup is one of my favorites during the fall and winter months.
I’m intrigued by Indian flavors. This is not only tasty, but beautiful as well, with colorful ingredients!
This takes me less than 30 minutes to make. It has such great flavor and is wonderful with some french bread.
So tasty and so good for you! My husband is a skeptic, but he’s even a fan of this one.
Unique and a great change of flavors to shake up the meals for the week. Thai green curry paste sounds spicy, but you control the amount.
